MANGO SALSA

This mango salsa is probably my most requested recipe ever. Whenever I serve it I get asked if I’ll share it and I’m always happy to! I’ve shared the recipe more times than I can count. It’s my go-to summer entertaining dish alongside grilled salmon or chicken. It’s easy. It’s delicious. And it’s best made ahead so when guests arrive all there is to do is fire up the grill and cook the salmon and asparagus.

What Ingredients Do I Need?

Plus, it falls under my favorite category of recipes. Recipes with five ingredients or less. Yup! That’s it. Five ingredients and one seasoning but I don’t count seasonings as main ingredients.

  • Mangoes – Any variety of mangoes will work.
  • Red pepper – Washed and diced.
  • Green onions – Peeled and sliced.
  • Limes – For juicing.
  • Cilantro – Otherwise known as coriander. Finely chopped.
  • Tobasco – I prefer Tobasco but you could use any hot sauce you have on hand.

How Do You Make The Mango Salsa?

This salsa is so quick and easy that it comes together in just 15 minutes. Basically, you chop all the main ingredients; the mangos, red pepper, green onions, and cilantro and add them to a bowl. Then squeeze in the lime juice and a few drops of Tobasco and mix well. The key is to leave the salsa to sit at room temperature for a couple of hours to let the flavors meld. Then taste and adjust the lime juice and Tobasco again if needed. That’s it!

What Do You Serve It With?

My favorite thing to serve the mango salsa with is grilled salmon and asparagus, but baked or sauteed salmon would be great too. It also goes really well with chicken, pork, and shrimp.

The mango salsa will keep covered in the refrigerator for up to 3 days but it is best served fresh.

Variations;

Occasionally I like to add avocado but make sure to add it right before serving so it doesn’t go brown. If you like you can also replace the green onion with red onion (although I prefer the green) and add seeded and chopped chili peppers instead of using the Tobasco.

Ingredients
  

  • 2 large ripe mangos (peeled and chopped)
  • 1 large red pepper (diced)
  • 4 green onions with green parts (thinly sliced)
  • 1 cup chopped cilantro
  • juice of 1-2 limes
  • 4-8 drops Tobasco (according to taste)

Instructions
 

  • Peel and cube the mangoes. Chop the red pepper, green onions, and cilantro and place in a medium-sized bowl with the mangoes.
  • Add the juice of 1 lime and 4 drops of Tobasco and combine well. Add more lime juice and Tobasco as desired. (I usually use the juice of 1 1/2 limes and up to 8 drops of Tobasco).
  • Allow the salsa to sit covered for at least 2 hours for the flavors to meld. Taste and add more lime juice or Tobasco as needed.
  • Serve at room temperature with grilled chicken or salmon.
