Easy Cream Of Tomato Soup

Equipment

  • 1 Immersion blender or regular blender.

Ingredients
  

  • 1 medium onion (chopped)
  • 2 garlic cloves (smashed)
  • 1/2 tsp (.5g) dried oregano
  • 2/3 cup (158ml) chicken broth
  • 27 oz (796ml) 1 can tomatoes
  • 2 tbsp (30ml) extra virgin olive oil
  • 1 tsp ( 4g) sugar
  • 1 cup (237ml) heavy cream (at least 18 milk fat)
  • Salt & pepper to taste (preferably white pepper)

Instructions
 

  • Heat a medium sized pot over medium-low heat.
  • Dice onions and add 2 tbsp olive oil to the pot. Add onions & cook until soft & translucent, about 5 minutes.

  • Peel & crush garlic & add to the pot. Cook for 2 minutes until fragrant. Do not allow the garlic to brown.

  • Add dried oregano and stir well.

  • Add broth and tomatoes to the pot and bring to a boil. Turn down the heat to medium & simmer for 5 minutes

  • Add sugar & stir well.

  • Using an immersion blender (or regular blender) blend the tomato mixture until very smooth.

  • Add the cream & cook over low heat until soup is hot. Do not allow it to come to a boil.

  • Season with salt & pepper and serve.
