This Maple Cranberry Chicken recipe is truly one of my favorite go-to chicken recipes when I’m short on time. Taking only 30 minutes from start to finish, it’s a recipe that I can pull together quickly with ingredients I usually have in my pantry. And just because it only takes 30 minutes doesn’t mean it’s short on flavor. This recipe truly has ALL the flavors! All those sweet, salty, sour & bitter flavors that make your flavor buds go WOW!
I’ve been making this chicken recipe for years. So long in fact that I can’t even remember where I came across it (if anyone knows please drop me a line and let me know so I can give credit where credit is due). The thing I do know is that it always impresses everyone who tries it and they never guess it only took me half an hour.
What Do I Need To Make This Chicken Recipe?
The main ingredients in this easy chicken recipe are boneless, skinless chicken breasts, white mushrooms, green onions, maple syrup, cider vinegar, and dried cranberries. Other than that all you will need are a few simple pantry ingredients like flour, S&P, dried rosemary, and garlic.

Did you read the title? Seriously, it takes 30 minutes!
How many will it serve?
It will serve 4-6 people depending on whether you use 2 or 3 sliced chicken breasts. If you have smaller chicken breasts or you prefer not to slice them in half you can use 1 whole chicken breast per person but the cooking time will be longer.
30-Minute Maple Cranberry Chicken
Ingredients
- 2 tbsp (15 ml) Extra virgin olive oil
- 1 Large garlic clove, chopped
- 1/4 cup (32 g) All purpose flour
- 1/8 tsp (.5 g) Each salt & pepper
- 1/8 tsp (.5 g) Rosemary leaves, chopped
- 2-3 Large skinless, boneless chicken breasts sliced in half lengthwise
- 4 Green onions
- 12 White mushrooms sliced about 1/4" thick
- 1/2 cup (125 ml) Maple syrup
- 2 tbsp (15 ml) Cider vinegar
- 2 tbsp (15 ml) Water
- 1/4 cup (32 g) Dried cranberries
Instructions
- Heat the EVOO in a large fry pan over medium heat.
- Add the garlic but do not let it turn brown.
- Place the flour, rosemary, salt and pepper in a bowl or plastic bag and coat the chicken pieces with the flour mixture shaking off the extra.
- Brown the chicken in the frying pan on both sides.
- Cut the green onions and slice the mushrooms and add them to the frying pan as you cut.
- Mix together the maple syrup, vinegar and water and pour over the chicken once it's browned.
- Sprinkle the cranberries around the chicken pieces.
- Reduce heat to a high simmer and set a timer for 15 minutes. Check the chicken frequently to make sure the liquid isn't evaporating too much. Add water if it is; you want it a little saucy.
- Serve with steamed broccoli and rice.
