CALIFORNIA BRUSCHETTA

This bruschetta recipe is really just an upscale version of avocado toast and honestly, it’s so simple I had doubts about whether I should even post it. I mean who hasn’t made avocado toast?

That being said, most of us make avocado toast for breakfast or for a light lunch. But have you ever tried it as an appetizer? This bruschetta makes a delicious pass-around starter for casual gatherings or parties. I like to serve it before a summer meal outdoors but it’s nice at any time of the year. It does need to be made right before serving to avoid it turning brown but it’s easy to make and takes no time to prepare.

What Ingredients Do I Need

Make sure to use really good quality baguette (no white doughy stuff) and premium quality “true” extra virgin olive oil. Please, please… do not cheap out on grocery store quality EVOO! There really is a difference so invest in a good bottle of EVOO as it is crucial to this dish. It’s also nice to use a specialty salt for finishing if you have it. It really elevates this dish. I use fleur de sel as I think it has a more refined flavor but if you only have table or sea salt that will be fine too.

  • Ripe avocado – You want the avocado to be soft enough to blend it with a fork.
  • Good quality baguette or bread
  • Good quality extra virgin olive oil – I recommend using the best quality EVOO you can afford. With so few ingredients in this dish, the EVOO will really stand out.
  • Flaky sea salt – I prefer flakes but you could use any other good quality salt.

So there you have it! This upscale version of avocado toast is an easy and tasty appetizer to serve at your next BBQ or gathering. It’s also delicious topped with shrimp if you want to make it a bit more elegant.

It’s so easy to prepare that I often make this bruschetta for myself at the end of the day and enjoy it with an aperitivo. It goes perfectly with an Aperol Spritz or a glass of Sauvignon Blanc.

Ingredients
  

  • 1 Large ripe avocado
  • 6 Slices of good quality baguette or bread
  • Good quality extra virgin olive oil for drizzling
  • Salt

Instructions
 

  • Lightly toast baguette slices. This can be done in a toaster or in the oven.
  • While the bread is toasting mash the avocado to your liking. I like to keep it a bit chunky but smooth is fine too. Add a bit of salt making sure not to overdo it as you will be adding more later.

  • Divide the avocado mixture between the toasted baguette slices.
  • Drizzle each piece with extra virgin olive oil and sprinkle with salt.

    Never be afraid to post the simple! Sometimes it is the simplest that are the greatest offerings and no, I would not have thought of it on bruschetta as an appetizer. Love it!
