When the temperatures start dropping and the days become shorter, I start craving comfort food. And nothing says comfort quite like a saucy chicken and vegetable pie topped with golden, flaky puff pastry straight out of the oven. This chicken pot pie recipe is one of my favorites and as I like to use a store-bought rotisserie chicken it comes together in a flash making it a great weeknight meal.

What Ingredients Do I Need To Make This
The key to making this pot pie quicker is to use a store-bought rotisserie chicken and frozen vegetable mix. However, if you have leftover chicken you could certainly use that too.
- Store-bought rotisserie chicken – Using rotisserie chicken makes this recipe super quick and easy. Just remove the skin before using.
- Celery – Diced.
- Onion – Diced.
- Frozen vegetable mix – I like peas, corn & carrots but use what you like.
- Extra virgin olive oil
- Butter
- All-purpose flour – I prefer to use unbleached flour but any flour will work.
- Milk – 2% or homogenized is good.
- Fresh thyme – Or 1 1/2 tbsp dried.
- Frozen puff pastry – Thawed in the fridge overnight.
- Egg – Beaten.
Easy Chicken Pot Pie
Ingredients
- 3-4 Cooked, skinless, boneless chicken breasts or meat from one store-bought rotisserie chicken with the skin removed
- 1 Celery stalk, cubed
- 1/2 Onion, chopped
- 2 Cups Frozen vegetable mix (I like peas, corn & carrots)
- Extra virgin olive oil
- 3 Tbsp Butter
- 1/4 Cup All-purpose flour
- 1 1/2 Cups Milk
- 3 Tbsp Finely chopped fresh thyme or 1 1/2 tbsp dried
- 1 Tsp Salt
- 1/2 Package frozen puff pastry, thawed
- 1 Egg, beaten
Instructions
- Preheat oven to 400F (200C).
- Cut chicken into 1-inch (2.5-cm) pieces.
- Heat a small amount of olive oil in a large frying pan and add onion and celery. Stir often until softened, about 3 to 4 minutes.
- Add chicken and frozen vegetables and cook until just warmed. Remove chicken and vegetables to a bowl.
- Return pan to burner and reduce heat to medium. Add butter. When butter is melted, gradually whisk in flour until smooth. Cook for about 1 minute.
- Slowly whisk in milk. Whisk until the mixture is thickened, 2 to 3 minutes.
- Remove the pan from the heat and add salt, thyme, and the chicken and vegetable mixture. Stir until the mixture is evenly coated with the sauce. It will be very thick.
- Pour mixture into a 10 x 8-inch baking dish or a dish that will hold 8 cups and place on a rimmed baking sheet.
- On a lightly floured surface roll puff pastry out until it's slightly larger than the pan. Lay over the filling pressing edges of pastry onto the rim of the dish. Using a sharp knife, pierce the middle of the pastry in 3 or 4 places to allow steam to escape. Brush the top with the beaten egg.
- Bake in the center of a preheated oven until the pastry is golden and the filling is bubbly, approximately 30 to 35 minutes. Let stand for about 10 minutes before serving to allow the sauce to thicken.
