1/4Cupchopped fresh parsley leaves plus more for garnish
2-5 Oz cansgood quality flaked Albacore tuna, drained
1Tspsweet paprika
1/2Tspcumin
Salt and pepper
1Tspwhite wine vinegar
1Tspfresh lemon juice
1/4Cupgood quality extra virgin olive oil
2Soft-boiled eggs, peeled and halved
8Ozuncooked couscous
Instructions
Cook the couscous according to the directions on the package.
In a salad bowl, combine the kidney beans, tomatoes, onions, chives, parsley and mix well. Add the flaked tuna to the bean mixture.
Add the paprika, cumin, salt and pepper, vinegar, lemon juice, and olive oil. Stir gently until the mixture is fully combined. Let sit for a few minutes for the flavours to meld.
Add the couscous to a serving platter and top with the tuna salad. Add boiled eggs and parsley for garnish. Enjoy.
