TUSCAN TUNA SALAD

This Tuscan tuna salad makes a great summer meal. The addition of the beans helps bulk it up making it a meal in itself but you can also serve it as a side dish. You can use white kidney beans or cannellini beans. And as this salad uses EVOO instead of mayonnaise, make sure you use the best quality extra virgin olive oil you can afford as the flavour really stands out.

It makes a really quick and easy summertime lunch or dinner. The trick with this Tuscan tuna salad is to prepare the salad ingredients while you’re cooking the couscous so this dish comes together in about 25 minutes.

What Ingredients Do I Need To Make This Tuscan Tuna Salad

  • Canned white cannellini beans – Rinsed and drained.
  • Grape tomatoes – Cut in half.
  • Celery – Cut in 1/4″ slices.
  • Red onions – Diced.
  • Chives – Chopped.
  • Fresh parsley leaves – You want to use flat-leafed parsley for this recipe as it has a more robust flavor than curly parsley.
  • Albacore tuna – Use a good quality flaked tuna and drain it well. I often use tuna packed in oil but you can use water-packed tuna as well.
  • Sweet paprika
  • Cumin
  • White wine vinegar
  • Fresh lemon juice
  • Extra virgin olive oil – For the best flavor, I recommend using the best quality EVOO you can afford.
  • Soft-boiled eggs – Peeled and halved.
  • Couscous – Uncooked.

Ingredients
  

  • 1 Can white cannellini beans, rinsed and drained
  • 8 Oz grape tomatoes, cut in half
  • 2-3 Celery stalks, cut in 1/4" slices
  • 1/3 Cup red onions, chopped
  • 1/4 Cup chives, chopped
  • 1/4 Cup chopped fresh parsley leaves plus more for garnish
  • 2- 5 Oz cans good quality flaked Albacore tuna, drained
  • 1 Tsp sweet paprika
  • 1/2 Tsp cumin
  • Salt and pepper
  • 1 Tsp white wine vinegar
  • 1 Tsp fresh lemon juice
  • 1/4 Cup good quality extra virgin olive oil
  • 2 Soft-boiled eggs, peeled and halved
  • 8 Oz uncooked couscous

Instructions
 

  • Cook the couscous according to the directions on the package.
  • In a salad bowl, combine the kidney beans, tomatoes, onions, chives, parsley and mix well. Add the flaked tuna to the bean mixture.
  • Add the paprika, cumin, salt and pepper, vinegar, lemon juice, and olive oil. Stir gently until the mixture is fully combined. Let sit for a few minutes for the flavours to meld.
  • Add the couscous to a serving platter and top with the tuna salad. Add boiled eggs and parsley for garnish. Enjoy.
