Peel and cube the mangoes. Chop the red pepper, green onions, and cilantro and place in a medium-sized bowl with the mangoes.
Add the juice of 1 lime and 4 drops of Tobasco and combine well. Add more lime juice and Tobasco as desired. (I usually use the juice of 1 1/2 limes and up to 8 drops of Tobasco).
Allow the salsa to sit covered for at least 2 hours for the flavors to meld. Taste and add more lime juice or Tobasco as needed.
Serve at room temperature with grilled chicken or salmon.
