Mango Salsa

Ingredients
  

  • 2 large ripe mangos (peeled and chopped)
  • 1 large red pepper (diced)
  • 4 green onions with green parts (thinly sliced)
  • 1 cup chopped cilantro
  • juice of 1-2 limes
  • 4-8 drops Tobasco (according to taste)

Instructions
 

  • Peel and cube the mangoes. Chop the red pepper, green onions, and cilantro and place in a medium-sized bowl with the mangoes.
  • Add the juice of 1 lime and 4 drops of Tobasco and combine well. Add more lime juice and Tobasco as desired. (I usually use the juice of 1 1/2 limes and up to 8 drops of Tobasco).
  • Allow the salsa to sit covered for at least 2 hours for the flavors to meld. Taste and add more lime juice or Tobasco as needed.
  • Serve at room temperature with grilled chicken or salmon.
