Grilled cheese sandwiches have long been at the top of my comfort food list. Going right back to my early school days when my mom used to make grilled cheese sammies and cream of tomato soup for lunch on cold, rainy days. Now back then her sandwiches were made with plain white sandwich bread & Velveeta slices and while there is nothing wrong with that old standby, over the years I’ve learned to elevate mine a bit. Better quality bread (I’m admittedly a bread snob), better quality artisanal cheeses, and homemade ketchup, chutney, and preserves instead of regular store-bought tomato ketchup.
What Ingredients Do I Need?
- Bread – For the best results, I recommend using good quality bread.
- Double-smoked Cheddar Cheese – Don’t skimp on this. The smoked cheese really adds to the flavor.
- Smoked Bacon – Again don’t skip this and use regular bacon (okay, you could). If you can find it I highly recommend using smoked bacon.
- Butter – You could also use vegetable oil.
How Do You Make This Grilled Cheese Sandwich?
For this sandwich, I used a good quality artisanal loaf of sliced Calabrese bread, double-smoked white cheddar cheese, and smoked bacon from my local farmer’s market. Other than that all you need is a little butter and cooking oil when you’re ready to fry the sandwich. To serve you can prepare the optional Rhubarb Chutney ahead of time. If you don’t have time to do that, it would also be great with any store-bought chutney or artisanal ketchup.
Tips And Tricks For Success;
- For crispier sandwiches use oil or a mix of oil and butter, not just butter.
- Another thing I like to do is add grated cheese to the outside of the bread for an extra hit of yummy crispy cheese.

Some others that make a delicious sandwich are Deli Swiss Cheese, American Cheese, Havarti, Gouda, Colby, Provolone, Gruyere, Monterey Jack and, Stilton. I have also used Brie and Camebert with delicious results. What Type Of Cheese Doesn't Melt When Grilled? Some semi-firm cheeses that will not melt well. Among them are Paneer, Halloumi, Cotija, Feta, Ricotta and soft Goat Cheese. What Is The Best Thing To Put In Grilled Cheese? You can add extra flavor by adding a variety of foods to your sandwich. If I'm using plain cheddar cheese I like to add a thin slice of raw onion. If I'm using a soft cheese like a brie I like to add caramelized onions, thin slices of pear or apple or even a chutney. Some other popular things to add are tomatoes, mushrooms, spinah or arugula.

Double Smoked Cheddar Cheese And Bacon Sandwich
Equipment
- Frying Pan
Ingredients
- 4 Slices Good quality bread
- 6-8 Slices Double smoked cheddar cheese
- 4 Slice Smoked bacon
- 3 tbsp Butter or vegetable oil
Instructions
- Heat frying pan on medium high heat.
- Cook bacon slices to desired doneness.
- Butter (or oil) 2 slices of bread & place in the hot frying pan butter side down. Add enough cheese slices to cover each slice of bread then add 2 slices of bacon to each piece.
- Butter the remaining bread and place on top of the pieces in the frying pan.
- Flip each sandwich when the bottom is crisp and golden brown. Continue cooking until the remaining side is golden brown.
- Remove from the pan. Slice diagonally and serve with rhubarb chutney or ketchup.
