THE BEST ROASTED ASPARAGUS

Roasted asparagus is one of my favourite vegetable dishes. It’s typically a spring and early summer vegetable in my part of the country but sometimes you can still find some fairly decent local asparagus around at this time of year. I’m currently trying to grow asparagus in my vegetable garden but as it takes 3 years before you can harvest it and mine is only in year 1 right now, I head to my local farmer’s markets for my supplies.

My favorite asparagus recipe comes from a friend of mine and it’s super easy but oh so delicious. You just roast it in the oven or grill it on the BBQ with olive oil and rock sea salt. The key is to use a generous amount of good quality extra virgin olive oil and plenty of rock salt. The salt cooks on the asparagus spears creating a caramelized effect that makes this dish so yummy!

What Ingredients Do I Need?

  • Asparagus – You want the freshest possible asparagus for this recipe. Remove the tough ends.
  • Extra virgin olive oil – I recommend using the best quality you can afford as it will stand out in this recipe.
  • Rock salt – I prefer rock sea salt but any good flaked salt will do.

How To Make Roasted Asparagus

  • Preheat your oven to 425 degrees F.
  • Prepare the asparagus by washing and drying well. Then break off the tough ends of the stalks.
  • Place the asparagus in a roasting dish large enough to fit all the asparagus.

  • Drizzle with extra virgin olive oil and salt and mix well.
  • Cook for 8-10 minutes depending on the size of your asparagus. Make sure not to overcook. Remove them from the oven when you can just pierce the outside with a fork.

Recipe Tips And Tricks For Success

  • Make sure that all of the asparagus gets coated well with EVOO.
  • Be liberal with the salt.
  • Be sure not to overcook the asparagus. You want to remove them from the oven before they are cooked all the way through as they will continue to cook while they are resting.

Storage Tips

Asparagus is best eaten right away but if you find yourself with leftovers you can store them in a covered container in the fridge for up to 3 days. Allow them to come to room temperature before eating.

Why is my asparagus soggy in the oven? The biggest mistake people make when cooking asparagus in the oven is overcooking it. Be sure to take them out before they are completely cooked. You should just start to be able to pierce them with a fork but not easily go right through.

Do you have to parboil asparagus before roasting? No. In fact it's best to cook them from raw if you're roasting in the oven. 

How do you keep raw asparagus crispy? To keep uncooked asparagus fresh, store them upright in a glass container with about 1-2" of water in the bottom. Cover the asparagas with a plastic bag and keep in the fridge until ready to use them.

  • Roast in a 425-degree oven for approximately 8-10 minutes. The cooking time will vary depending on how thick your asparagus is. I like to take mine out of the oven a minute or two earlier as it continues to cook even after it's removed from the oven and I prefer it al dente.
