Anyone who knows me knows that I consider avocados and mangoes two of the world’s most perfect foods. They’re perfect because you don’t need to add anything to them or do anything fancy to them to make them taste great. They taste delicious all on their own! Add another perfect food like shrimp to the mix I’m a happy, happy girl. Now pair this beautiful avocado, mango, and shrimp salad recipe with a crisp Sauvignon Blanc or Pinot Grigio and I’m in heaven.
This salad ticks all my taste boxes. First, because it contains three of my favorite “perfect” foods, and second because it has so much flavor. Salty, sweet, sour, and a little bit spicy it’s like a flavor explosion in your mouth. Adapted from Pierre Thiam’s Senegalese Avocado And Mango Salad With Rof, this colorful salad is easy to prepare and makes a fresh and delicious appetizer or light meal.
What Ingredients Do I Need To Make This
- Fresh flat-leaf parsley – For the best results use flat-leaf parsley as it has a more robust taste than curly parsley.
- Scallions or green onions – Sliced.
- Garlic – Finely chopped.
- Habanero chili – Stemmed & seeded.
- Lime zest – I recommend using unwaxed limes.
- Lime Juice – Freshly squeezed.
- Good quality extra virgin olive oil
- Ripe mangoes – Peeled, pitted, and sliced into thin strips. Any variety of mangoes will work.
- Ripe avocados – Peeled, pitted, and sliced into thin strips.
- Grape tomatoes – Halved.
- Shrimp – Medium-sized cooked, peeled and deveined.
How many servings will this recipe make?
It will make four meal-sized servings or six appetizer-sized servings. There will also be enough leftover dressing to serve with another meal. It’s delicious over grilled chicken or fish.
How long will it take to prepare this Avocado, Mango, and Shrimp Salad recipe?
It will take about 20 minutes to prepare the dressing and salad and another 30 minutes to marinate.
Enjoy this avocado, mango, and shrimp salad recipe as an appetizer to a meal or as a light meal on its own with added shrimp or grilled chicken. You’ll also have enough dressing left over to top grilled chicken or fish for another meal.
Avocado, Mango & Shrimp Salad
Ingredients
- 2 cups Fresh flat-leaf parsley, lightly packed
- 4 Scallions or green onions, chopped
- 2 Peeled medium garlic cloves
- 1 Habanero chili, stemmed & seeded
- Pinch Salt & ground black pepper
- 1 tsp Grated lime zest
- 1/2 cup Lime Juice
- 1/4 cup Good quality extra virgin olive oil
- 2 Ripe mangoes, peeled, pitted & sliced into thin strips
- 2 Ripe avocados, peeled, pitted & sliced into thin strips
- 1 cup Grape tomatoes, halved
- 18-20 Medium-sized cooked, peeled & deveined shrimp
Instructions
- In a food processor, pulse parsley, garlic, scallions, chili, salt and pepper together until finely chopped or it looks like a dry pesto.
- Add lime juice and lime zest and pulse until incorporated.
- While the food processor is running, slowly pour in the extra virgin olive oil until mixture reaches the consistency of a thick dressing.
- Peel, pit and slice the mangoes lengthwise into thin strips.
- In a large bowl mix the mangoes and tomatoes with 1/4 cup of the dressing.
- Marinate at room temperature for about 30 minutes.
- Peel, pit and slice the avocados lengthwise into thin strips.
- Add avocados to the salad and stir gently until everything is fully coated with the dressing. Add more dressing as desired.

- Spoon the salad onto serving plates.
- Top with the shrimp and serve immediately.
