CORN SALAD RECIPE WITH TOMATO AND AVOCADO

I don't know about you but during the summer months, I'm always looking for fast and easy recipes that use healthy, fresh ingredients and don't require me to spend a lot of time in the kitchen. Who wants to turn on the stove during the dog days of summer?

I'm addicted to this delicious corn salad recipe from Skinny Taste. A friend introduced me to Gina's site a few months ago and I find it a great resource for healthy, lower-calorie recipes. Her Corn, Tomato, and Avocado Salad recipe is the perfect, easy-to-prepare side salad for a summer BBQ. It's tasty and fresh and comes in at only 128 calories per cup. Or add chicken or shrimp (or bacon as I did) and it's a refreshingly light meal that's so easy to prepare.  You just cook the corn and then toss all the ingredients together and in about 10 minutes you've got a sensational salad.

What Ingredient Do I Need To Make This

  • Corn kernels - Cut from 1 large steamed or boiled corn on the cobb.
  • Avocado - Diced.
  • Cucumber - Diced.
  • Cherry tomatoes - Halved.
  • Red onion - Diced.
  • Extra virgin olive oil - For the best flavor I recommend using the best quality EVOO you can afford..
  • Fresh lemon juice
  • Cooked chicken, shrimp, or bacon - Optional.

What To Serve This Corn Salad With

I served this corn, tomato, avocado salad recipe with BBQ ribs but it would pair equally nicely with BBQ chicken, pork, or fish, or make it a full meal by adding grilled shrimp, chopped or shredded chicken, or even bacon as I did. Just add a glass of sauvignon blanc and you're all set. Enjoy!

Ingredients
  

  • 1 Cup kernels of corn cut from 1 large steamed or boiled corn on the cobb
  • 5 Oz avocado, diced (1 medium avocado)
  • 1 ½ Cup cucumbers, diced (about 3 small)
  • 1 Cup cherry tomatoes halved
  • 2 tablespoon red onion, diced
  • 2 teaspoon good quality extra virgin olive oil
  • 2 tablespoon fresh lemon juice (from 1 medium lemon)
  • ¼ teaspoon kosher salt
  • Fresh black pepper, to taste
  • 1 Cup cooked chicken, shrimp or bacon, (optional)

Instructions
 

  • Toss all ingredients together and serve immediately.
